- 1/2 tsp Jeera
- 1 bay leaf
- 1/2 cup coriander leaves
- 1/4 cup Chopped mint leaves
- 1/2 cup Milk
- Few Saffron strands
- 1/2 cup Oil
- 2 tbsp Ghee
- As per taste Salt
Instructions to make to make Vegetable Biryani
- Boil rice with salt and add the whole Garam masala at the same. Boil 70 percent only.
- For gravy take a vessel, add oil, jeera, tej patta, add chopped onion and Saute, add ginger garlic paste, once translucent add all the veggies and dry masalas.
- Now add tomato purée to the veggies, and cook till oil leaves on slow flame. Adjust salt, add curd,, and little water to adjust the consistency of the veggies, it should not be dry nor should be very thin.
- Fry the sliced onions for the barista.
- Finally to set the biryani, here all have different ways, I have done this way, add one portion of vegetables at the bottom, add rice, now here the milk you have add little Haldi(turmeric) for colour, as I don't Like using food colour and add kesar in it. Pour some spoons on the rice, add some barista, chopped dhaniya and chopped pudhina.
- Complete it with alternate layers. And top with melted ghee.
- Cover the lid tight with flour and keep on dum for 40-45 mins..
Serve hot with mix. Vegetable raita..
