  20. 1 tbsp tomato sauce
  21. 1 tsp ginger garlic paste
  22. 2-3 tbsp butter
  23. to taste Salt
  24. Water to boil rice
  25. For peri peri sauce
  26. 1 small red bell
  27. 3 red chillies
  28. 1 tbsp lemon juice
  29. 1 tbsp paprika powder
  30. 2 tsp oregano
  31. 1/2 tsp red chilli powder
  32. 4-5 cloves garlic
  33. 3 tbsp oil
  34. 2 tbsp vinegar
  35. to taste Salt
  36. 1 pinch red food colour
  37. For the grilled chicken*
  38. 1 kg boneless chicken cut into 1×6 inch strips
  39. 1 tsp ginger garlic paste
  40. 1/4 tsp pepper powder
  41. 1 tsp red chilli powder
  42. 1/4 tsp coriander powder
  43. 1/4 tsp cumin powder
  44. 1 tbsp lemon juice
  45. 2 tbsp thick curd
  46. 2 tbsp peri peri sauce
  47. to taste Salt
  48. 1 tsp butter

Instructions to make to make Peri peri chicken

  1. Prepare the sauce by grinding all the mentioned ingredients to a smooth paste. Marinate the chicken will all the ingredients mentioned under grilled chicken and set aside for 1 hour. After an hour grill the chicken in the oven at 200°C for 10 minutes.
  2. Preparing the gravy. Cut the grilled chicken into small bite sized pieces and set aside. Heat butter in a pan, add the onions, green chillies and saute for a few minutes. Add the chopped tomatoes, ginger garlic paste, salt and fry for a few minutes. Next add the tomato puree, peri peri sauce and the capsicum. Cook for a few minutes. Add in the chicken pieces and cook. Add the cornflour dissolved in water and thicken the gravy. Lastly add the milk and let it come to a boil. Set aside.
  3. Preparing the rice. Par boil the rice till 80 % done. Strain and set aside. In a vessel heat butter. Add the onions and saute for a few minutes. Add the ginger garlic paste, and the red and green bells. Cook for a few minutes. Add the peri peri sauce, tomato sauce and salt. Mix well. Add the boiled rice and mix everything well. Cover and simmer till done. Enjoy!
