- 1 kg basmati rice
- 1/2 cup oil
- 3 tbsp ghee
- 2 cinnamon stick
- 4 green cardamom
- 3-4 cloves
- 2 bay leaves
- 1 tsp cumin seeds
- 10-12 green chillies
- 5 tsp Salt or as per taste
- For chicken marination
- 1 kg chicken
- 2 tsp red chilli powder
- 1/2 tsp turmeric powder
- 2 tsp garlic paste
- 2 tsp ginger paste
- 1 tsp cumin powder
- 200 gm curd
- 3 tbsp barista(fried onion)
- 4-5 green chilli crushed or paste
- 1 lemon juice
- 3 tbsp ground masala
- 1.5 tsp Salt or as taste
- as required Some coriander and mint
- For ground masala:-
- 2 bay leaves,
- 5-6 pepper corns,
- 8-10 green cardamom,
- 1tsp mace
- 2 tsp Caraway seeds,
- 4tsp coriander seeds,
- 3-4 whole dry red chill
- 6-7 cloves,
- 1 black cardamom
- 1/2 tsp fennel seeds,
- 1/4 TSP nutmeg
- 1 star anise
- For layering of biryani
- 2 tbsp coriander leaves
- 2 tbsp mint leaves
- 1/2 cup barista
- 1 tbsp kewra water
- 1/2 tsp orange food colour
Instructions to make to make Chicken Biryani restaurant style
- First wash the chicken well.take a mixing bowl add chicken.then add red chilli powder,cumin powder,ginger garlic paste,crushed green chili,salt,fried onion,ground masala,coriander and mint leaves,lemon juice,1tbsp ghee.mix well.then add curd and mix again nicely.keep the marinated chicken in fridge for one hour.
Take all the spices mention for ground masala in a grinding jar.grind them and make a powder.


- Rinse the rice for 3-4 times then soaked in water for half an hour.then take a wide vessel add 8 glass of water.add cumin seeds,1 bay leaf,1 cinnamon stick,2green cardamom,10-12 green chilies and salt add little ghee.boil the water the add soaked rice and cooked the rice until 80% done.then strain the rice.keep aside



- Take another vessel add oil when oil heated add the remaining whole spices saute few seconds the add marinated chicken in it.cook on high flame for 5 minutes.add little water cover and cook for 10-15 minutes on low flame.when chicken is 90% cooked turn the flame high and evaporate the moisture.turn off the flame.



- Now take a vessel add half chicken then layering with cooked rice sprinkle some barista,coriander and mint leaves.then repeat the same method.sprinkle barista and coriander and mint leaves.in a bowl take little water and add food colour.spread this colour on rice,add kewra water.cover and cook on low flame for 7-8 minute.turn off the flame.
