12yrs.ago I visited Kerela. Allappuzha former name Alleppey. There is a sea beautiful place. On island there is a rice milk nearer to hotel.They use brass utensils to serve food.coconut water as welcome drink.
THIS IS AN AUTHENTIC KERELIAN FOOD
Ingredients and spices that need to be Make ready to make Vegetables Matta Rice with Thakkali Pachadi and Sambhar:
- For Rice :-
- 1/4 cup tender coconut water
- 1 cup red rice
- 1/2 tender coconut malai
- to taste Salt
- 1 onion
- 1 tsp urad dal
- 1 tbsp chana dal
- 1 pc brinjal
- as needed Few curry patta
- 2-3 lady finger
- 2-3 tindora
- 2 tbsp. Oil
- 1 pc. Dry red chilli
- 1 tsp garlic powder
- 1/2 tsp chilli powder
- 1/4 tsp. turmeric powder
- 1 tsp Mustard seeds
- 1 pc. Potato
- 2 tbsp. tamarind pulp
- 1/4 cup coriander chopped
- For Thakkali:-
- 2 .tomato
- 1 pc. Onion
- 1/2 cup dry coconut
- 3-4 tbsp curd
- 1 tbsp oil
- 2 pc. green chilli
- 1/2 tsp. Mustard seeds
- as needed Few curry leaves
- 1/2 tsp cumin seeds
- to taste Salt
- 1/4 tsp. asafoetida
- 1 dry red chilli
- For Sambhar:-
- 2 tbsp. Tuver dal
- 1 tsp. Chana dal
- 1 tsp moong dal
- 3-4 dry red chilli
- to taste Salt
- 1 tbsp dry coriander seeds
- as needed Few curry leaves
- as needed Khada masala
- 1/2 tsp turmeric powder
- 2 tbsp tamarind
- 1 tsp mustard seeds
- 1/2 tsp asafoetida
- 1/2 pc. drum stick
- 1 pc. potato
- 1 pc. onion
- 2 tbsp. Sambhar masala
- 1/4 tsp fenugreek seeds
- 2 tbsp oil
- 1/4 cup bottle gaurd
- 1/4 cup coriander
- 1 bay leaf
- 1 tsp rice
- 1/4 tsp .black pepper
- as needed Few curry leaves for tadka
Instructions to make to make Vegetables Matta Rice with Thakkali Pachadi and Sambhar
- Vegetables Matta Rice:-Soak red rice for 2hrs. Add 1glass water salt nboiled in cooker make 2-3whistle and strain.


- Heat oil add all veggies garlic powder salt and saute add 1/4cup tender coconut water cover the lid for 5-7mins. on slow flame. Add boiled rice With tender coconut malai. saute ladies finger and add in a rice. Add tamrind pulp mix well and serve.Garnish with tender coconut malai.



- Thakkali Pachadi:- Chopped tomatoes and boiled in water. Mix tender coconut malai onion chilli 1tb curd salt in a mixie jar and churn. Add boiled tomato again curd and churn mix well and churn. Serve in a bowl.For tadka:-Heat oil mustard cumin seeds curry leaves and dry red chilli. Pour ona tomato mixture. THAKKALI PACHADI IS READY.


- For Sambhar:--Roast dry dal in a pan one by one. and take out in a plate. Now roast all masala and khada masala. Take in a mixie jar add asofortida turmeric powder red chilli powder mustard seeds and oil. Churn and make dry powder.

- Heat oil add mustard seeds red chilli and all chopped veggies saute add 2tbsp powder. saute and add water cook on a slow flame add sambhar masala salt red chilli powder turmeric powder and soaked tamrind cover and simmer 15-20 mins. Sambhar is ready.



- Tasty delicious Kerela thali is ready to serve. With coconut water
