This is one of my and my father favourite dish . I just learn for him . After making 2 to 3 time I adjust all spices according to my taste and I love it . This dish having four different layer one is boiled rice then veg stir fry noodles then having chicken gravy and lastly mayonnaise sauce layer some boil fried noodles crushed on top which gives taste very different some fried green chilles
Ingredients and spices that need to be Prepare to make Singaporean rice:
- 1 +1/2 glass rice soaked then boiled
- 1/2 cup oil
- 300 gms noodles
- 1 cup julienne cut carrots
- 1 cup sliced capsicum
- 1 cup spring onions
- 1 cup cabbage sliced
- 2 tbsp soya sauce
- 2 tbsp vinegar
- 2 tbsp chilli sauce
- 1 tsp black pepper
- 1 tsp salt
- 1/2 tsp red chilli powder
- 1/2 cup oil
- For chicken gravy
- 1/2 kg chicken boneless boti
- 1 tbsp ginger garlic paste
- 1/2 cup oil
- 1 cup ketchup
- 1/2 tsp black pepper
- 1 tsp salt
- 1/2 tsp red chilli powder
- 2 tbsp soya sauce
- 2 tbsp vinegar
- 2 tbsp chilli sauce
- Mayonnaise sauce
- 1 cup mayonnaise
- 1/2 cup ketchup
- 1/2 tsp black pepper
- 1/4 cup milk
- 1 tbsp chilli sauce
- For garnish
- Oil for frying
- Boiled fried noodles
- 5-6 green chilles fried
Instructions to make to make Singaporean rice
- First boil rice and add 1/2 cup oil and set aside now boil noodles add salt and oil to boiling water and after 15 mins strain all water and add noodles to bowl full of water for 30 mins then strain all the water and set it aside.



- Now for stir fry veg noodles add 1/2 cup oil in a wok then add all veg and stir fry for 1 min then add spices and stir fry it for another 1 minute then add noodles and stir fry for 1 minute and set it aside



- Now for chicken gravy add oil to wok then chicken and fry it for 1 minute then add ginger garlic paste and stir fry for 1 minute then add ketchup and all sauce and all spices to it and cook it for 5 minutes if thick then add 1/4 cup water



- For mayonnaise sauce, add 1 cup mayonnaise and 1/2 cup ketchup and black pepper chilli sauce and 1/4 cup milk to make a sauce


- Take 1 and 1/2 boil noodles,now for frying add some oil to wok then add boiled noodles add noodles to hot oil and fry till golden brown and set aside and fry some green chillies.



- For layering first layer with boiled rice then stir fry veg noodles then chicken gravy then mayonnaise sauce lastly garnish with crushed fried noodles and fried onion
